Apple-Stuffed Grilled Pork Chops

The Charm of Home: Apple-Stuffed Grilled pork Chops
I made these pork chops for dinner this weekend and I loved the way they turned out, so I thought I would share the recipe with you.  

Ingredients:
4 butterfly cut pork loin chops (These were at least 2 inches thick before butterflied.)
Salt and freshly ground pepper
1 teaspoon of unsalted butter
1/2 sweet onion (like Vidalia), thinly sliced
1/2 teaspoon finely chopped rosemary
4 (1/4 thick) slices tart sweet apple (like Granny Smith)
1 teaspoon brown sugar
1/4 cup apple butter

Heat grill to medium heat.  Season each chop on each side with salt and freshly ground pepper.  Set aside.

In a skillet melt the butter over low heat and add the onion and rosemary.  Cook stirring occasionally for 7 minutes until the onion is very tender and caramelized, season with salt and pepper.  Remove to a dish to cool slightly.

Add the apple slices to the skillet and saute in remaining butter for 5 minutes.   Remove from skillet and set aside.
  
Place the chops on the hot grill and cook for 7 minutes on the the butterflied side not the outside.  Turn the chops and "stuff" the inside (butterflied side) with the apple slices and the caramelized onion, sprinkling with brown sugar on the inside of each chop.  Fold the chops over and brush the top with apple butter and grill for 6 minutes.  Flip the chops and brush thae other side with apple butter and cook for another 6 minutes.  Should cook until the internal temp is 150 degrees F.  Remove the chops from the grill and serve hot.
